QUALITY STANDARDS IN THE WINERY
Silvio DENZ and his team put their philosophy into practice, demanding quality at every stage of the winegrowing process. Denz applies these same standards to the equipment he installs in the cellars of his five vineyards in the Bordeaux region and the two vineyards in which he is a partner outside France.
The cellar which best epitomises this quest for perfection is surely that of Château Faugères
. However, the wine cellar planned for Château Péby Faugères
will be in no way inferior to it.
Still, the technical installations would be pointless without preserving ancestral know-how
, especially the care of the grapes produced. Each cellar makes every effort to respect the tried und trusted arts of winemaking (vatting by gravity flow etc). On arrival in the winery, the grape must be treated with the utmost care (carried in crates, cold room, sorting tables, conveyors, inerting etc).
